Italian salad dressing&lt;/li&gt;&lt;li&gt;2 tbsp. lemon juice&lt;/li&gt;&lt;li&gt;1 tsp. garlic powder&lt;/li&gt;&lt;li&gt;1/2 tsp. red pepper&lt;/li&gt;&lt;li&gt;1/2 tsp. tarragon leaves&lt;/li&gt;&lt;li&gt;2 lbs. &lt;span style="font-weight: bold;"&gt;fresh tuna steaks &lt;/span&gt;(1 inch thick)&lt;/li&gt;&lt;li&gt;1/4 c. butter&lt;/li&gt;&lt;li&gt;1/2 c. chopped onions&lt;/li&gt;&lt;li&gt;1 c. chopped green onions&lt;/li&gt;&lt;li&gt;1/2 c. chopped bell pepper&lt;/li&gt;&lt;li&gt;1 c. cream cheese&lt;/li&gt;&lt;li&gt;1 c. half &amp;amp; half cream&lt;/li&gt;&lt;li&gt;1 c. chopped, cooked shrimp&lt;/li&gt;&lt;li&gt;2 tbsp. chopped parsley&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;Combine salad dressing, lemon juice, garlic powder, red pepper, and tarragon leaves in a 2-quart mixing bowl. Remember, if you have more than 2 8 oz tuna steaks, you might need to adjust the ingredients to marinate. Marinate both sides (dredge steaks and get marinade on both sides). Let sit in refrigerator for 30 minutes before grilling. *Soy sauce will overpower tuna if you marinate for too long!&lt;br /&gt;&lt;br /&gt;Light the grill while tuna is marinating. Once coals are white (30 minutes) spread them and clean the grill, then wipe with oil so steaks don't stick.&lt;br /&gt;&lt;br /&gt;Grill for 4 minutes or less per side for 1 inch steaks, depending on how you like them. Steaks should be firm with pink in the middle. If you prefer steaks to be more rare, grilling time should be 2 1/2 minutes on each side.&lt;br /&gt;&lt;br /&gt;Recommended Side dishes:&lt;br /&gt; Serve with white and long grain wild rice and grilled yellow squash cut lengthwise, sprinkled with Sea Salt and pepper squash and drizzled with Extra Virgin Olive Oil. Use the same marinade as for the tuna. For grilled squash, brush with marinade frequently during grilling, and grill until just tender. Worcestershire sauce&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;Marinate tuna steaks in Italian dressing and Worcestershire sauce 1 to 2 hours. Grill on Bar-B-Q pit 15 to 20 minutes on each side. Fish will flake when done. Serve with crawfish sauce on top.&lt;br /&gt;&lt;br /&gt;CRAWFISH SAUCE:&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1 bunch green onions&lt;/li&gt;&lt;li&gt;1 stick butter&lt;/li&gt;&lt;li&gt;1 c. fresh mushroom slices&lt;/li&gt;&lt;li&gt;1 pt. half &amp;amp; half&lt;/li&gt;&lt;li&gt;3 tbsp. flour&lt;/li&gt;&lt;li&gt;Dash of liquid crab boil&lt;/li&gt;&lt;li&gt;2 c. crawfish tails or shrimp or 1 lb. crabmeat&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;Saute onions and mushrooms in butter until tender. Stir in flour until smooth, but do not brown. Fold in seafood and heat. Add half &amp;amp; half and simmer, stirring until thick. Add dash of crab boil and salt to taste. Serve over grilled tuna steaks or grilled rib eyes. Balsamic vinegar&lt;/li&gt;&lt;li&gt;1/3 c. olive oil&lt;/li&gt;&lt;li&gt;1/4 c. parsley, minced&lt;/li&gt;&lt;li&gt;2 garlic cloves, crushed&lt;/li&gt;&lt;li&gt;1/2 tsp. salt&lt;/li&gt;&lt;li&gt;1/4 tsp. black pepper, freshly ground&lt;/li&gt;&lt;li&gt;4 tuna steaks, 3/4 inch thick&lt;/li&gt;&lt;li&gt;1 red bell pepper, cut in strips&lt;/li&gt;&lt;li&gt;1 yellow bell pepper, cut in strips&lt;/li&gt;&lt;li&gt;1/2 red onion, cubed&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;Whisk together vinegar, oil, parsley, garlic, salt and pepper to form marinade. Place tuna steaks in a suitable container for marinating and pour marinade over tuna. Cover and refrigerate for&lt;br /&gt;2-4 hours. Turn steaks occasionally.&lt;br /&gt;Prepare grill or broiler. Saute pepper strips and onion in 1 tablespoon olive oil and 1 tablespoon marinade until tender. Set aside.&lt;br /&gt;Grill steaks for 2 minutes on each side while basting with the marinade. Tuna should flake apart and be gray-ish in color all the way through. Place tuna steaks on serving plates and garnish with&lt;br /&gt;onion and pepper strips.
